Pumpkin Turkey Lasagna Roll Ups!

For me, nothing says fall more than pumpkin, apples, and turkey and this recipe has two of those three quintessential autumn ingredients.
While I can not remember where the original recipe came from, I’ve been making this variation of lasagna, with pumpkin and ground turkey rolled into perfect little bundles of joy for many years and just love them.
They are tasty. They are satisfying. They are nourishing. And they are simple to put together.
Seriously, I know the word lasagna can conjure up images of long hours in the kitchen and a culinary challenge, but these truly are simple to create!
While they are yummy for dinners, my favorite way to enjoy them is to prep on Sunday for lunches for the upcoming week!
Pumpkin Lasagna Roll Ups With Ground Turkey
Recipe for 4 servings:
8 lasagna noodles cooked according to box
1 cup ricotta
1 cup canned “just” pumpkin or pumpkin puree
8T shredded mozzarella
1 cup marinara or pasta sauce
1 pound ground turkey
Pumpkin pie spice
Preheat oven to 350 degrees
Cook the noodles according to directions
Brown the ground turkey until cooked through
Mix the pumpkin and ricotta with pumpkin pie spice
Rinse cooked noodles in cold water and pat dry
Thin layer of marinara on bottom of a cooking pan with edges
Spoon the ricotta/pumpkin mixture onto the lasagna noodles
Spoon the browned ground turkey onto the lasagna noodles and ricotta/pumpkin noodles.
Roll up
Place seam down in the pan
Top with rest of marinara and mozzarella cheese
Bake for 20-25 minutes
These are excellent to prep ahead of time and warm when you want to eat them! Vegetarian? Leave out the ground turkey Want extra vegetables? Add some sautéed spinach or kale!
